Banana Oatmeal Bread Recipe

This is from allrecipes.com.  It looked good and I tried it.  The whole family ate that one quicker than the regular banana bread.  This would make for a good breakfast food as well.   It makes one loaf.


Oatmeal Banana Bread

1 stick of butter (1/2 of cup)
1/2 cup of applesauce
1 cup sugar
2 eggs
1/2 tsp of vanilla
1 cup flour
1 cup quick cooking oats
1 tsp baking soda
1/2 tsp salt
1/4 cup milk
1/2 tsp cinnamon
2 large bananas.
1/2 cup nuts, raisins, or dried fruit if desired.

preheat oven to 350
grease and flour a 9x5 inch loaf pan

In one bowl mix together flour, oats, baking soda, salt, and cinnamon.
Cream butter and sugar together
Mix in eggs, vanilla, and applesauce
add in banana's
Add in the dry ingredients.  Stir together
add in 1/4 cup of milk.  Mix well. 

Pour into pan and cook for 60-70 minutes.  Top should start to crack a little when done.

Rudolf Balls

The formal name to this is Russian Tea Cakes but growing up my mother always called them Rudolf Balls.  The recipe I got from allrecipes.com

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, cream butter and vanilla until smooth. Combine the 6 tablespoons confectioners' sugar and flour; stir into the butter mixture until just blended. Mix in the chopped walnuts. Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet.
  3. Bake for 12 minutes in the preheated oven. When cool, roll in remaining confectioners' sugar. I also like to roll mine in the sugar a second time.

3 C. semi-sweet chocolate chips
1 14 ounce can of Sweetened Condensed Milk
1 Tablespoon Vanilla
Optional Nuts to desire


Butter bottom of 9x9 baking pan

In a saucepan melt down chocolate chips and sweetened condensed milk
Sir constantly.  Be careful not to scorch

Remove from heat.

Add in Vanilla
Add in nuts

add in pan.

Chill for 2 hours.

For a family size of 8 I usually triple the recipe.  This recipe has not been tripled.

1 1/2  cups
all-purpose flour
  • 3   tablespoons 
    granulated sugar
  • 4   teaspoons 
    baking powder
  • 1/8  teaspoon 
    salt

  •  
  • 2   
    eggs
  • 1   cup 
    milk
  • 1/4  cup 
    vegetable oil

  •  
    Mix up all the ingredients.  Pour onto hot griddle.  Serve.  I like my pancakes a bit on the thin side so I had to use more milk to thin it out a tad.

    Funnel Cakes (Elephant Ears)

    This snack is so easy to make.  I found it on the taste of home website while looking up funnel cakes.   It is suppose to work with a funnel as you pour in into the hot oil but I just use a ladle.  You can use it to put your own toppings on like powder sugar or fruit but I like a cinnamon and sugar mix.  I usually double the recipe but it does make a lot for a what it calls for.   

    FUNNEL CAKE (ELEPHANT EARS)

  • 4 eggs
  • 2 cup milk
  • 2 cup water
  • 1 teaspoon vanilla extract
  • 6 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tablespoon baking powder
  • 1/2 teaspoon salt
  • Oil for deep-fat frying
  • 
  • In a large bowl, beat eggs. Add milk, water and vanilla until well blended. Combine flour, sugar, baking powder and salt; beat into egg mixture until smooth. In an electric skillet or deep-fat fryer, heat oil to 375°.
  • Cover the bottom of a funnel spout with your finger; ladle 1/2 cup of batter into the funnel. Holding the funnel several inches above the oil, release your finger and move the funnel in a spiral motion until all the batter is released (scraping with a rubber spatula if needed).
  • Fry for 2 minutes on each side or until golden brown. Drain on paper towels. Dust with cinnamon sugar.

    Ham & Potato Soup

    This recipe serves a family of 8 plus leftovers.  I found this recipe on allrecipes.com under "Delicious Ham and Potato Soup". 


    Ham & Potato Soup



    7c. potato's diced.
    1 1/2c. ham diced
    1 med. onion
    7c. water
    4Tbl. chicken bouillon (I perfer the loose seasoning vs the cube)
    10Tbl. butter
    10Tbl. flour
    4c. milk

    Dice up potato's, onion, and ham and add into a large pot.  Add in water.  Cook until potato are soft.  Stir in chicken bouillion. 

    While the chicken bouillion is being cooked into the soup grab a smaller pan.  Melt butter.  Whisk in flour and stir.  Slowly add in the milk.  Continue stirring until mixture is thick. 

    Stir in milk mixture into the larger pot of potato's and ham.  Stir well. 

    Add salt and pepper if desired. 

    You can also dice up celery to add or some cheese sauce to the soup.
